Spring was definitely in the air today. The weather forecast was for rain but it seems to have bypassed Hamilton. Yay!
It’s been a little while since I did any baking and I’ve missed it. Today I made a Speckled Chocolate Chip cake, the first time I’ve baked a cake using a cake ring baking dish. I love the way it turned out, with simple ripples – should make slicing it up evenly an easy job.
It was a very simple recipe from the Edmunds Cookbook and only took about 10 minutes to prepare and 55 minutes to cook. Definitely one to make again.
