Chocolate Chip Cookies

At the beginning of 2012 I made a decision not to buy shop bought cookies or snack bars anymore as it was costing too much.  Making my own is more cost effective plus I know exactly what goes into them.

A favourite with my boys is a variation of the Peanut Brownie coookies in the Edmonds Illustrated Collection cookbook. Instead of peanuts I use chocolate chips as one of my boys doesn’t eat nuts.

  • 125g butter, softened
  • 1 cup sugar
  • 1 egg
  • 1½ cups standard grade flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 2 tablespoons cocoa
  • 1 cup chocolate chips (or peanuts if using them)

Cream butter and sugar until light and fluffy. Add egg and heat well. Sift flour, baking powder, salt and cocoa together. Mix into creamed mixture. Add chocolate chips (or peanuts) and mix well. Roll tablespoons of mixture into balls. Place on greased oven trays. Flatten with a floured fork. Bake at 180°C for 15 minutes or until cooked.  Makes 20.
